Here in the Village of Peace Dimona, our community has thrived on plant-based principles for over 60 years, and we can confidently say that our plates are anything but limited. Those of us who traveled extensively in the 80s and 90s, across the U.S. and to various countries, remember the adventure of seeking out suitable meals. Unless you were in a major city or near a university, finding nourishing options could be a challenge. Co-ops in "artsy" neighborhoods or reliable Indian and Southeast Asian restaurants often served as culinary havens, offering tasty, locally made plant-based fare when other options were scarce.

A quick search on social media reveals thousands of recipes, and the variety of offerings expands daily. It's now commonplace to find "plant-basedized" versions of beloved comfort foods—from quality plant-based pizzas and burgers to tacos and breakfast dishes. Where we once had to craft our own plant-based mac-n-cheese from scratch, many stores now offer a half-dozen ready-to-go varieties. Dining out has become a joy, with thoughtful and delicious plant-based dishes becoming the norm, reflecting a growing appreciation for the flavor possibilities of whole, plant-centered meals.
